Tacos campechanos

A campechano is a mix of gilled meats, in this case, tangy salted beef cecina and ruby red longaniza, a local sausage. This stand, situated in the main plaza about 15 meters to the right of the entrance to the church is always popular. Bright blue tortillas are hand-made and salsas are spectacular, especially a pale orange one made with peanuts. Do avoid the soggy fried potatoes that most locals like to throw on top of the tacos, much better are sautéed nopales and onions. Puesto de Tacos, open daily, is located on the southwest corner of the main plaza, Malinalco, State of Mexico.
