A campechano is a mix of gilled meats, in this case, tangy salted beef cecina and ruby red longaniza, a local sausage. This stand, situated in the main plaza about 15 meters to the right of the entrance to the church is always popular. Bright blue tortillas are hand-made and salsas are spectacular, especially a pale orange one made with peanuts. Do avoid the soggy fried potatoes that most locals like to throw on top of the tacos, much better are sautéed nopales and onions.
